What to do when you find yourself with too many ripe pears?
Make Pear Cake, of course!
I bake a wonderful pear cake (I will post the recipe tomorrow) that's quick and easy, and tastes delicious. First you make a crusty layer for the bottom of the cake, using flour, sugar and butter.
Then you whip up the batter using ingredients most of us would already have on hand.
It mixes up fast into a chunky batter that makes for a very moist cake, and the whole thing bakes together in a spring form pan.
A little meringue is spread over the top before baking,
When done, it comes out looking like this:
