Banana Nut Muffins at Heart and Home

Lately almost every week I've been baking at least one Banana Bread. Seems like we always have so many ripe bananas sitting around, and I've gotten really good at whipping up a bread in no time. But, if you're anything like me you've forgotten how quick and easy it is to bake up a batch of Banana Nut Muffins - and they are delicious!





They taste great first thing in the morning for breakfast, and make a nutritious snack for hungry kids after school, too. They're easy to pack in a brown-bag lunch, or to grab when you're in a hurry and heading out the door.



This recipe is so easy, it takes only minutes to throw together, and only 20 minutes or so to bake. You'll be enjoying the wonderful aroma and their delicious taste in no time.



You'll get a dozen decent sized muffins, or more if you use a mini-muffin pan.



The hardest part about this recipe is waiting for them to bake.....



My kids love them,and unlike the banana bread, they can eat a muffin as soon as they have cooled enough to be handled.  ( I always wrap and store the bread for 24 hours to increase it's flavor. Drives the family nuts!)



Here"s the recipe:

BANANA NUT MUFFINS

1 3/4 cups flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 beaten egg
1/2 cup milk
1/4 cup cooking oil
3/4 cup mashed bananas
1/2 cup chopped nuts

Grease a 12 cup muffin pan, set aside. In a medium mixing bowl combine flour, sugar, baking powder and salt. Make a well in center of dry mixture, set aside.

In another mixing bowl combine egg, milk, oil and mashed bananas. Add mixture all at once to dry ingredients, stirring until just moistened. Add nuts and stir lightly.

Spoon batter into prepared pan, bake in 400 degree oven 20 minutes or until light golden. Cool in pan 5 minutes, remove muffins from pan. That's all there is too it! Quick and easy, and delicious.

For extra healthy muffins, replace some of the flour with whole wheat flour, and replace most of the oil with applesauce. Or you can do what  I do:  add 3 heaping tblsp. of flax seeds to the dry ingredients to give an added crunch and extra healthy boost.

Warm one of these in the toaster oven while your tea is steeping, and sit down  and enjoy a nice little guilt-free snack!
